Pacific Wind Chardonnay 2017
The Pacific Wind Chardonnay is named after the cold Pacific wind that continuously sweeps through the Edna Valley. The wind serves as a moderating influence to the vineyards, resulting in a showcase of bright acidity in this wine. The fruit was hand-picked at night to ensure the grapes were delivered to the winery in the freshest state. Once the grapes were received at the winery, they went through a whole cluster press. The juice was barreled down to French oak barrels for primary fermentation, with 25% of them being new. The Chardonnay was fermented at a low temperature to preserve the natural aromas. The wine was aged in tight grain and lighter toast barrels for 9 months. The Chardonnay experienced 100% malolactic fermentation to balance the vibrant acidity of the wine.
ABOUT THE VINEYARD
The fruit for this wine comes from the Poletti section of Tolosa’s estate vineyard, Edna Ranch. This vineyard site is well exposed to the sea breeze, enhancing the bright acidity of this wine. The vines are planted on an ancient sea bed with the field selection of the Tepesque Chardonnay grape.
Color: Lemon with a hint of green
On the Nose: Ripe pineapple leading to a confectionary note of brioche toast, with citrus notes of Meyer lemon and orange zest, transitioning into notes of yellow nectarine, jasmine and lemongrass
On the Palate: A lively acidity showcasing fresh lemon curd, Asian pear, green kiwi, star jasmine, green apple skin, fresh hazelnut with salinity on the finish
Fermentation: Barrel fermented
Aging: 19 months, 25% new French oak barrels
