1772 Petite Sirah 2018
2018 was a very long growing season due to cooler temperatures early on. Luckily, summer provided very consistent temperatures that helped the vines catch up. Nevertheless, Petite Sirah is one of the last varieties to ripen at Tolosa, and these grapes were picked the first week of November.
"The biggest issue with Petite Sirah is tannin management. To achieve that, the grapes are destemmed and fermented at warm temperatures in an open-top stainless tank. Youthful, powerful aromas of blackberry, blueberry, cassis, and fig are accented by notes of baking cocoa, fennel, cardamom, black pepper, and tobacco. Full-bodied with firm tannins. Similar concentrated ripe fruits alongside Italian leather, dark chocolate, and balsamic reduction flavors and lovely savory quality. This Toulouse-Style Cassoulet would complement a bold wine like our 1772 Petite Sirah 2018."
