The Sauvignon Blanc grapes developed earlier on the vine; therefore, we picked them a few weeks prior to what we have seen in past vintages. The wine was 100% barrel fermented and aged in Acacia wood barrels, with 15% of them being new for 6 months. Acacia wood doesn’t contain tannins. It keeps the wine light on the palate, while enhancing the floral and fruit components. We also blocked malolactic fermentation to preserve the fresh and crisp palate.

Notes and Pairing Suggestion from Bob Bath, MS:
We have a viticultural freedom in California that is unlike regions of Europe that specify certain grapes must be planted to utilize the name of the region. That’s incredibly beneficial for us because California’s exceptional terroir allows us to successfully grow just about any grape anywhere. Such is the case of our 1772 Sauvignon Blanc. As great as the Edna Valley is for Chardonnay and Pinot Noir, this wine has the signature grapefruit, green apple and lemon lime fruits that famous Sauvignon Blanc regions are known for. It’s the immediate approachability, medium body and bright acidity of this wine that also make it an exceptional wine for food. Try it with this spring Vegetable Terrine recipe.”
