The wine was aged for 9 months in French oak barrels, with 19% of them being new.  On such a vintage, this wine will show the bright red fruit common in Edna Valley as well as the freshness that comes with the cool coastal climate. Tannins are present, and they will soften nicely with a little bit of bottle aging.

Apex provided the first of our Pinot Noir grapes to be harvested in 2018. The site sits above the fog line and thrives in the extra sun exposure, producing a luscious fruit profile with acidity on the back of the palate. The fruit is fermented in stainless steel, open top tanks. We ferment one of the lots at a warmer temperature to enhance the silky texture for which the Santa Lucia Highlands region is famous for producing. The wine was aged in a combination of new and neutral oak barrels for 9 months.

A magnum 1.5L of Tolosa's signature Pinot Noir is perfect for any celebration.  Pinot Noir can have so many unique and beautiful aromas.  However, to bring out those aromas, the grape needs the right place to grow and strict attention to detail in winemaking.  When your tasting notes for this wine include descriptors like candied bacon, black forest cake, red licorice, evergreen, and yellow beans, you have discovered that special place and the right winemaker.  In addition to those lovely nuances, this wine possesses an ideal combination of concentrated flavors and bright acidity, which is a hallmark of the long, cool 2019 vintage.
